2. Cocoa bean:
- crumble
- chocolate sponge
- chocolate caramel
- whipped chocolate ganache
3. Mango-vanilla:
- mango gel with pieces of fresh mango
- whipped ganache with vanilla
- carrageenan glaze
4. Mandarin with yuzu and Long pepper:
- mandarin gel with yuzu, candied mandarin and pepper
- whipped mandarin ganache
5. Lime with thyme:
- lime gel with candied lime and fresh thyme

6. Grapefruit with Aperol:
